I'm not sure that you have the two spoon technique down right if you are getting two sticky spoons. The key is to scoop with one and use the back of the other to remove the dough onto the sheet. My biggest complaint about the ice cream scoop for dough is the clean up. I might save a few seconds on the scooping, but I'd much rather wash two spoons than the dough crammed between the metal band and the scoop (and for only a few dozen cookies the time spent evens out).
