Can I have a special request, perhaps Martin would be willing to tackle it? There's a new bread on the market, called 'Smart Bagels', along with the 'Smart Rounds'... breads that look like just the top and bottoms have been sliced off the body of the bagel or hamburger bun, and the middles discarded. Can someone put together a blog showing how these are made? I'd love to be able to bake my own, using my fav KAF flours (which are healthier for me and my husband than the commercially used flours), but have NO idea how they accomplish this. My husband loves bagels, but he can't handle the excessive wheat of them... it tears his gut up. That's why I use KAF products, because it minimizes the irritation that the commercial flours cause, because of all the chemical treatments they use to process it. Plus, the benefits of making them at home guarantees the freshness! Thanks, in advance, for at least putting this out there as a goal!
