Hi Maxine, Bread flour is a relatively new flour in the history of flour. Growing wheat has come a long way over the past few decades. Cake or fresh yeast isn't used much these days. It's hard to work with, and doesn't last long. Instant yeast is our yeast of choice, it's fast, convenient, consistent, and when stored properly in an air-tight container, will last for years in the freezer. Happy baking!
