We love the grilled cheese and tomato soup combination! When making a lot of sandwiches for the family I hated spreading the butter on all those slices especially if I forgot to take the butter out of the frig early enough. I have even microwaved it so it would be easier to spread. Then I got lazy. Now I melt the butter in the pan and then rub the bread around to soak up the butter in a big frying pan and I make 4 sandwiches at a time. Your mayo idea sounds like it is worth a try. Thanks for all of the tips on cheese too. I like to experiment with cheeses but the rest of the family likes only American cheese.
