No matter how I make a grilled cheese sandwich, I always place the cooked sandwich on a cookie cooling rack for 30-60 seconds. This allows the steam to escape, and when you put it on a plate to serve, it does not get soggy.
My son (grown) likes American cheese. His son (teen) likes sharp cheddar. I am usually using a whole grain bread, but for my clan, it is all about the cheese!
