The comments about tomato soup make me laugh! MY memory around this "classic combination" is my older brother coming home for a visit from college and complaining to my Mom. He lived in a Cooperative House and every time the other guys made grilled cheese sandwiches for dinner they also made the tomato soup, and he HATES tomato soup! He didn't know why you can't serve one without the other.
Our cheese of choice has always been Tillamook or Bandon mild cheddar, and when I make food for my own family it still is. I'm not that crazy about mayo, I spread my bread with a special flavored butter that I make for grilling bread. Usually I do grilled ham and cheese together and I spread the slices of ham with just a dab of mustard mixed with a dab of home-made currant jelly. It's easier than trying to put a messy spread on both sides of the bread.
Making your own flavored herb butter may sound like more work than just using mayo, but if you make up a batch and have it on hand it actually isn't. It also isn't anywhere near as much work as making home-made bread, and the results are fabulous!
