I use ghee instead of regular butter because it doesn’t smoke and I don’t have to spread it on the bread. Put a big scoop of it on your griddle and when it has melted set your sandwich on it. There’s plenty of ghee left on the griddle to coat the other side when you flip the sandwich. Works great but I’ll try using mayo next time. Thanks for the tips!
