I've found that grating the cheese, rather than using slices, helps it melt evenly and makes it easy to get lots of cheese evenly spread across the whole piece of bread. I use a microplane greater that is labeled "course," which is actually fairly fine. It works well with the mild to medium cheddar I like to use in my grilled cheese sandwiches.
