I use the oatmeal bread recipe from the 200th King Arthur anniversary cookbook. It makes the best grilled cheese sandwiches (and best toast and best anything sandwich). I once saw a chef say that you can use any sweet jam and any cheese and it will work in grilled cheese. Sometimes, I will use a roasted garlic jam and for cheese will use jarlsberg. It is excellent, but I always find myself still wanting the classic grilled cheese. The classic has to be Cabot American cheese.
