Hi Dawn. We'd recommend starting with an Irish soda bread recipe that's designed to be baked in a loaf, such as our American Irish Soda Bread recipe. To make it gluten-free, simply swap out the flour for our Gluten-Free Measure for Measure Flour. You can leave in or remove the spices and fruits and see if you enjoy those results. Happy GF baking!
