I have been baking Irish soda bread for 40 plus years (my husband's grandmother's recipe) and this recipe was pretty good. I like the convenience of muffins. I made these this afternoon for my daughter and friends who are gluten-free. I did fine them really too sweet - maybe cut the sugar down to 1 tablespoonful? And when you were developing the recipe, did you try them with buttermilk? I'd be interested in trying some variations.
