Hi Renee! Thanks for reaching out. This is such an amazing cake. While you certainly can bake a flourless chocolate cake in a springform pan, there are a few things to keep in mind. First, because you are baking this recipe in a water bath, you'll want to make sure that your pan is completely sealed. Not all pans are. We would hate to hear about water either leaking into your cake or cake batter leaking out into the water bath. You may want to consider wrapping the outside of your pan with foil to create another layer of protection against that. The other thing to note is that since you won't be turning the cake over, you may not have a perfectly smooth top to decorate. You will, however, have an equally delicious cake to serve!
