Debbie, you could indeed use marshmallow cream; probably a good choice if you make these again, given the issues you had. I'm not sure if altitude could have played a role; I can say that yes, the marshmallow is very sticky and you have to spread it quickly; but when I made it, it didn't burn (that might indeed be the altitude), and it didn't crystallize and stick to everything. Sorry you had such a challenging experience! PJH
