You could try "cheating" with the marshmellow filling by using 2 cups of store-bought marshmellow creme mixed with 1 1/2 cups of sifted powdered sugar, 1/2 cup of softened butter, and 1 teaspoon of vanilla extract with a mixer on low speed until it is fully incorporated. Feel free to adjust the quantity of marshmellow creme to your preferred ratio of filling to crust with the Mallomars. If you find this filling is too soft, feel free to set them set up in the freezer for 30 minutes before coating in chocolate. Good luck and happy baking! --Kye@KAF
