Brilliant. PJ, I've read your articles before & always benefited. I'm an experienced but not expert home baker. I've won 10 Blue Ribbons for Baking with my grandsons at the California State Fair. But the older and busier I get, the more I value smart shortcuts. So I really appreciate the details about how to make the best use of my new (not yet purchased Zojirushi Virtuoso) Bread Maker.
