I would add one additional suggestion, based on my own experience.
Flour hands with a bit of flour before removing dough and shaping it. On occasion the dough was a bit sticky, even after adding 1 or 2 tablespoons of flour early in the blending process. It definitely helps with the the final shaping process and makes the dough easier to work with. Been baking all my bread since last Fall with the Zo Virtuoso and every loaf has been perfect.
