Hello! I would like to make sourdough in my basic Zo (which I dropped and broke the other day; the new one will be here tomorrow). My question is about the 'hooch' (liquid on top of the starter), which I understand is what gives the bread its most sour taste. Should I mix that into my starter before measuring it for the recipe? Or can I use that in place of liquid? Thanks!
