My sourdough "fell" when I tried making it in the bread machine (tasted great, but not very pretty!).
I know my starter was good, as was my yeast.
It's possible the dough was a little wet, but I'm wondering if it overproofed? The machine I am using has a default "knock down"/"punch down" knead between rise 1 and rise 2. I omitted it, but should I have left this step in? If so, for how long?

What a great tip to remove the paddle!
