Hi Patricia! Your best bet on finding out when the cycles change is to check the manual for your machine or to reach out to the company as it will vary from machine to machine. Bread loaves made in a machine are often on the dryer side since it bakes for a set amount of time rather than until the loaf is perfectly done at 190°F, so recipes that include milk, eggs, butter, and/or potato flour are your best bet as those ingredients increase the tenderness and will help hold in moisture.
