Margaret, we recommend taking the dough out after the first rise, putting it in your bread pan, and then allowing it to rise a second time before baking. It doesn't need a third rise. As far as the timing of your second rise and your oven temperature and timing, you'll want to follow whatever conventional baking instructions are in your recipe, as each will have different guidelines.
