Hi Myles, that's tricky! We checked out the manual as well, and it doesn't seem to give any indications for the length of each of the cycles. The next time you bake up a loaf of bread, you might want to watch the display on the screen to see if it changes as the machine moves through the mixing/kneading, rising, and baking cycles. You should hear the machine knock down the dough after it has risen once, and then let it go through the final rise. This is the point when you'll want to take it out of the machine and remove the paddles from the bottom of the bucket if you're looking to make a loaf without any holes. You can also take it out of the machine and bake it at this point. Watch your machine closely next time as it moves through the cycles and you'll get a better sense of when it does what — consider it a bread experiment! Kye@KAF
