My dad used to be a master baker back in the 60's with many awards to his name. I know exactly why he had those accolades as I still remember, as a child, the look, feel and taste of the wonderful bread he used to make. I never forget his words: "To make real bread you need to have the knack, the passion, the right ingredients, the process and the right timing" and one more important thing he said was "When you cut a slice of bread and you see lots of big holes between the cooked dough then that is the mark of a well made and cooked bread". Basically I never use modern home bread machines.
