We're not exactly sure what Glen was referring to, Cristina, but we carry several products that can help contribute to a loaf's rise and overall structure. For example, some bakers like to add 1-2 Tbsp of Vital Wheat Gluten to whole grain loaves to strengthen structure while lightening texture and promoting a good rise. Our Whole Grain Bread Improver is a combination of Vital Wheat Gluten, inactive yeast and ascorbic acid that can also help loaves to rise higher, and have better texture.
