Hi Juliene, To prevent those bubbles, pat the dough out into a rectangle and then fold it in thirds like a business letter. Seal the seam well and place the log seam-side down in the pan. By patting the dough out gently into a flatter "sheet" before folding, you'll be able to see any big bubbles and get rid of them. ~ MJ
