I'm sorry, Dolores, I haven't baked with Xylitol and this can't guarantee it'll work in any and all recipes. I suspect that it would work just fine in bread recipes, as most use very little sugar; you could also simply leave the sugar out of any yeast bread recipe, understanding it'll be a bit less tender, less long-lasting, and of course, not sweet.
