I have dual regular/convection oven. My mother-in-law lived with us for a year and tried making biscuits in my oven. She used the Bakewell recipe, 500° for 5 minutes, turn the oven off to finish. Well, they didn't rise or brown being baked on regular setting . I turned off convection settings and still an issue. We had biscuits about three times a week, for weeks, until she conquered that oven! I haven't found a setting to turn off the fan, I may look again.
