I have an Lg oven and must say I wouldn't think of baking cookies or pastries (i.e. cream puffs) without convection, I guess my fan must be really ok! Never had those uneven tops on muffins or cakes. BUT. I have had the hot spot problem, and never knew why. I also never knew the difference between convection bake/roast as we got ours as a floor model and they'd lost the manual.
