From other medical conditions I've developed a mess of food allergies including wheat/gluten, rice, potato, and sorghum. No gluten-free flour blend for me. I've experimented a little with almond flour, but I've been very surprised with banana flour. It makes the BEST biscuits and muffins, but very few companies sell it so far. I've also got chickpea flour, but haven't played with it yet. I'm going to try your almond flour pizza crust and almond/coconut flour shortbread cookies first thing tomorrow!
