Hi Pam, here's what Flourish blogger PJ Hamel has to say about making gluten-free baguettes and rustic bread: "The high-rising, light texture of baguettes doesn’t easily lend itself to the absence of gluten. We don’t recommend you try to bake a gluten-free baguette, but instead urge you to check out our tempting array of gluten-free bread recipes."
