South Louisiana local here: The person who finds the baby in their piece of cake is responsible for providing the next cake. The colors stand for justice, faith and power and they honor the three Kings that visited the Christ child (Jesus) on the Epiphany (Jan. 6th). Mardi Gras season officially starts on this day and when all the bakeries "officially" start selling them in droves. We typically roll straight into Mardi Gras from Christmas and many believe it is good luck to wait until the Epiphany to take your tree down. However, a lot of us tend to keep the tree up and just turn it into a Mari Gras tree.
