Helen, you don't need to use super fresh bread to make your crumbs — we just encourage you to use bread that's freshly crumbled rather than store-bought bread crumbs, which can be much more dry. Try slicing the bread and letting it dry out for a few hours or even overnight before processing in your food processor. Hope that helps! Kye@KAF
