HI Karen,
It's hard to take an internal temperature on a dough that is rolled like this, you want to be sure your thermometer is in the bread, not the filling. Bake to 200°F, and all should be well. I'm loving the chocolate cinnamon idea, thanks for sharing that. ~ MJ
