If you'd like to make this into two sandwich-sized loaves, you may want to increase the recipe by at least 1.5x. You can also consider baking this recipe in a loaf pan if you want to give the bread some structure. The bake time will still be roughly the same, perhaps a bit longer if you make larger loaves.
