I've made this recipe 4 times now, to rave reviews each time. The last two times I have spread and cut the dough into loaves right on the well-floured parchment. This saved me the messy step of transferring to the parchment. They came out just fine; I couldn't discern a difference from the first two times, except that the loaves were more attractive the latter way.
