This looks very much like a bread I ate as a child from Balkan Bakery in Ashtabula, Ohio, which had a fairly large italian populus. It was very crusty/shattering when sliced, and a very soft crumb with big holes, great toasted. Ordered the book tonight, can't wait to try the recipe. Thanks for your research.
