You may use only starter, but it needs to be healthy and well-fed. Use your judgment as to how long the bread will rise. Since we're using instant yeast, it's not necessary to proof the yeast; if you're referring to the final proof, the bread does get 20 minutes rest and then a stretch. It's just a different technique.
