I can't say that we use ovens that are quite that fancy, Lorraine, at least not in the Test Kitchen. if you want crusty bread, the steam setting will actually help quite a bit. Does it also remove the steam at some point? If it doesn't, make sure to open the oven to release the steam after 10-15 seconds. Jon@KAF
