There are many different methods to create stem in an oven, though the one PJ used is my general one. I don't think spraying is effective because you lose a lot of steam while spraying and yes the water can hit the loaves. People also use ice cubes but you don't get a burst of steam. Another method is to soak a bar towel in water roll it up and place on a tray in the oven. This creates a lot of steam but you need to remove the towel after 10 mins and you can burn yourself ( use tongs and an oven mit).
