This is scalable when expressed as a formula, if you can do simple arithmetic: flour, 100% water, 75% salt, 2% I've made this literally hundreds of times over the past several years. I start a preferment on Saturday night with 50% flour and water plus a pinch of yeast. Add the preferment to the remaining 50% flour and 25% water plus the salt on Sunday morning. It never fails, and scalable is nice. I made an 800g flour loaf for my book club once, and their eyes were, as they say, popping out of their heads when they saw the loaf. My wife and I share a 200g flour loaf with our Sunday meal. I have also found that firebrick outperforms baking stone. You can heat firebrick on top of the stove as long as you are CAREFUL when you move it.
