Annie, go ahead and set your oven at 475°F - that's what I did. You can substitute 2 1/2 teaspoons coarse sea salt or kosher salt for the 2 teaspoons sea salt called for in the recipe; or substitute fine sea salt 1:1. Good luck! PJH
