Hello, Sue. My basic recipe will make 8-9 biscuits when cut at appx. 1 inch in height. In most pans that you would use for biscuits, 8 or 9 biscuits will pretty much fill the pan with sides touching. Also, by doing this there will be less outward expansion, therefore more height, and with crusting more confined to the tops since the sides are protected. These are my reasons, and I very much appreciate P.J.'s answers and happy with the opportunity to learn more of the technical aspects of baking from the pros! Doris.
