Let me start by saying that I truly love KA flours and wouldn't bake bread with anything else, but...I'm also a past (2nd place) winner at the International Biscuit Festival and a Southerner, and sorry, but this Carolina girl won't make biscuits with anything but a southern soft wheat flour. Sure, you can make a very serviceable biscuit with nearly any good flour, but it just isn't the same. We take our biscuit making very seriously down here.
