Thanks, Eric - so nice to hear from you again! I agree, I don't even measure anymore. But when I do, the nice thing is - for each once of ingredient you get 1 biscuit; 2 ounces yields a larger biscuit. So 4 ounces SR flour and 4 ounces cream yields 8 small or 4 large biscuits. Now how's that for easy scaling up? :) PJH
