I made two loaves of KAF Italian Market bread today to take to a dinner tonight. Between one thing and another, I didn't get started quite on time and realized that I couldn't possibly bake them or I would be late for the event. I called the Bakers Hotline, which of course is a saved number on my phone, and the woman I spoke with confirmed that my best bet would be to put them in the refrigerator and bake them as soon as I could when I got home. Eight hours later I arrived home, at midnight, preheated the oven, put on one more coat of egg wash and some seeds, and into the oven they went. In spite of being quite cold, they baked just fine in the 25 minute time in the recipe. I waited for them to cool, wrapped them in plastic wrap, and then in some of the long plastic storage bags I had also purchased at King Arthur. They are now resting happily in my freezer.
