I have been baking bread for over 50 years and many of these tips have become second nature to me. But, even so, I have learned a lot from this article and all the comments on it. My brother has been having trouble with his bread falling apart when he makes a sandwich. I will pass om your suggestions to either use potato water or mashed potatoes. You didn't say if the mashed potatoes replace the normal liquid or are in addition to the liquid. Also, how much mashed potatoes?
