After my bread, rolls, tortillas or other like baked goods are ready for short term storage, we keep them in the microwave oven. This tightly sealed oven keeps the breads at room temperature, but also protects it from airborne molds and bacteria. Also, placing the bread back in the microwave after using the microwave, provides a more humid atmosphere that helps slow the stale process. We can typically store a loaf of bread, or a bag of rolls for up to a week in the microwave before they begin to show signs of mold or staleness. This time varies based on how often you take them out of the oven to use the oven or retrieve a slice of bread or a roll.
