Patrick, it's always a bit of a mystery when recipes turn out differently from time to time, even when they seemed to be prepared exactly the same. The difference could be a factor of the freshness of the flour, as well as the freshness of the yeast. Be sure you're using the right kind of both flour and yeast, and store them in the freezer to keep them fresh for longer. Also make sure the liquid is a consistent temperature each time you prepare the dough. If you're looking to make bread in the bread machine, you also might consider using a recipe that's specifically designed for this purpose.
