You can, Susan! We especially like to use our Baker's Special Dry Milk (http://bit.ly/1O0ag0G) for added flavor, tenderness, nutrition, and longer lasting freshness. We generally add just 1/4 cup (per 3 cups of flour) to the dry ingredients without making any other adjustments and enjoy the results. Mollie@KAF
