Great info. I am just getting into the baking-my-own-bread thing and I love it. I am starting with bread baked in a pullman loaf pan. It does take practice to get it just right. Your tip was great about using a thermometer to test for doneness. I want to take the inaccurate quesswork out of wondering if my loaf is done.
