Sinking generally means that your bread was a bit over risen, Margaret. Please make sure that you're only allowing the dough to rise 1 inch above the pan from the center of the loaf. The dough on the sides of the pan should only be just under or flush with the top of your loaf pan. Also, please make sure your pan is 8 1/2 x 4 1/2. Jon@KAF
